About Thai fruit tea
Thai fruit tea is made from orchard fruit sliced and sun-dried rather than from fruit flavouring. The fruit here is bael, known in Thailand as matoom: sliced into rings, dried until amber and brewed whole. The cup comes out golden and naturally sweet with a gentle caramel note, and there is no sugar in it - the sweetness is what drying concentrates in the fruit itself.
Hot in the cool season, iced in the hot one
In Thailand the same slices are drunk both ways. Simmer two or three rings for 5-10 minutes for a hot cup; for iced tea, brew at double strength, let it cool and pour it over ice. It is naturally caffeine-free, so it suits the evening as easily as the morning.
What to pair it with
Bael is the sweetest thing we sell, which makes it the natural counterpart to roselle, the most tart. Brewed together they balance each other; brewed apart they show the two extremes of the range.

- Sold loose by weight - from a 20g trial pack at $14.90 up to 1kg, not ground into teabags.
- Free shipping on the teas on this page. We have a $25 minimum order; orders of $45 or more ship free (conditions apply by destination), and below that a flat $19.90 tracked fee applies. The exceptions on the site are the 15-Herb blend’s two smallest packs: the 25-teabag pack carries a $19.90 charge and the 50-teabag pack $14.90, each per pack.
